COCONUT SHRIMP CURRY

INGREDIENTS:
- 1 Small Red Onion
- 1 Tablespoon Ginger Garlic Paste
- 2 Tablespoons Roasted Red Pepper Paste
- 1 lb of Raw or Cooked Shrimp (Deveined)
- Thai Chili Peppers (Optional)
- 1 Can of Unsweetened Coconut Cream
- 1 Tablespoon Sesame Oil
- Cilantro for Garnish
- 1 Lime
- Salt to taste
DIRECTIONS:
1.) Prep your protein by washing, peeling, and deveining the shrimp.
2.) Turn the heat of the stove on to medium-low. Add one tablespoon of coconut oil to the pot. Finely dice the red onion and add to the pot. Mix well until the onion is softened.
3.) Once the onion is softened, add in one tablespoon of ginger-garlic paste. Then, add two tablespoons of roasted red pepper paste. Mix well.
4.) Add 1lb of raw or cooked shrimp to the pot, and mix until the sauce is incorporated well.
5.) Add one can of unsweetened coconut cream to the pot. Add in the juice of one lime and drizzle one tablespoon of sesame oil. Mix and adjust seasonings to your preference.
6.) At this point, add in thai chili peppers or jalapeno for added heat and cilantro for garnish.
7.) Serve with Jasmine white rice and enjoy!
