FRESH AND EASY POKE

What is Poke?
Poke bowls have originated from Hawaii through Japanese influence. The recipe consists of fresh sushi-grade seafood, veggies, and sushi-grade rice that can be customized to your heart’s desire. Check out how you can make my version of a fresh and easy salmon poke bowl that is fresh, healthy, and full of flavor.
INGREDIENTS:
- Sushi-Grade Salmon
- Lettuce
- Persian Cucumbers
- Lemon
- 1 Avocado
- 1 Jalapeno
- Green Onion for Garnish
- Sushi Rice
- Soy Sauce
- Sesame Oil
- Rice Wine Vinegar
- Sesame Seeds
- Yuzu Dressing
- Sriracha
DIRECTIONS:
1.) To make the sushi rice, add 1 1/2 cups of sushi rice to a bowl. Wash the sushi rice at least 3 times until the water runs clear.
2.) Drain the rice and fill the rice up with about 1 3/8 cup of water. Let the rice soak for about half an hour.
3.) Once ready, bring the rice to a boil. Once it reaches the boiling point, reduce the heat to the lowest setting and let it cook for 15 minutes or until ready. To allow the pot to fully steam, add a cloth over the pot and be sure not to open it as it cooks. Once ready remove from pot and add to a bowl.
4.) For the sushi vinegar, add in 1/4 cup of rice vinegar, 2 tablespoons sugar, 1 teaspoon of salt, and 1 teaspoon of sesame oil. Add the sauce to the rice and gently mix together. Allow the rice to cool until it reaches room temperature.
5.) For the salmon, combine soy sauce, sesame oil, sriracha, yuzu dressing together. Adjust seasoning to taste.
6.) For the salad, combine lemon juice, yuzu dressing, rice vinegar and sesame oil together. Adjust seasoning to taste.
7.) For the vegetables, slice the Persian cucumbers, jalapenos, and avocadoes. Finely dice the green onions. Set aside.
8.) To assemble, grab a bowl and fill with 1/2 parts sushi rice and 1/2 parts of salad. Add the cucumbers, avocados, and jalapenos.
9.) Add a nice helping of the salmon sashimi to the bowl.
10.) Garnish the bowl with green onions, sesame seeds, sriracha, and lemon juice. Enjoy!
