POMEGRANATE APPLE FETA SALAD

This Fall Harvest Salad carries all the sweetness of fall alongside the savory taste of feta and nuttiness from the walnuts. This salad is perfect to eat as a meal with grilled protein or as a side dish for your holiday dinner. This salad is so easy and takes only 10 minutes to prepare! INGREDIENTS:

  • 10 OZ Chopped Kale
  • 1 Diced Honeycrisp Apple
  • 1 Cup Dried Cranberries or Raisins
  • 1 Cup Walnuts
  • 1 Cup of Pomegranate Seeds
  • 5 Oz Crumbled Feta Cheese

Dressing:

  • 1 Teaspoon of Salt
  • 1 Tablespoon Black Pepper
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon of Raw Honey
  • 1 Tablespoon Apple Cider Vinegar
  • 3 Tablespoon Olive Oil
  • 2 Garlic Cloves Finely Minced

DIRECTIONS:

1.) Prep and wash your kale salad mix. Be sure to remove any hard stems remaining. Dice your apple into square cubes. Prep your pomegranate by removing the seeds and washing thoroughly.

2.) To make the dressing, mix together salt, black pepper, Dijon mustard, raw honey, apple cider vinegar, olive oil, and finely diced garlic cloves. Whisk vigorously until combined.

3.) Leave 1/3 of the portion of pomegranate, feta cheese, apple, and nuts aside to garnish on top.

4.) Add all the ingredients into the salad including the dressing. Mix thoroughly until combined.

5.) Top the salad with the remaining ingredients and serve! Enjoy.
