CRISPY SWEET AND SAVORY KHURMI

Khurmi is an authentic snack that is eaten in the Behari region. These Khurmi biscuits are full of crispy layers and are both sweet and salty. The addition of black sesame seeds adds a salty, nuttier flavor to the sweetened biscuit. Black seeds have a natural remedy and health benefits that effectively treat kidneys, hypertension, digestive health, pain-killers, and more. This bite-sized biscuit is the perfect snack to munch on with a hot cup of chai or coffee.

INGREDIENTS:

  • 3 Cups All Purpose Flour
  • 3/4 Cup Sugar
  • 1/4 Teaspoon Salt
  • 3/4 Ghee
  • 1 Tablespoon Kalonji (Black Seeds)

DIRECTIONS:

1.) Add about a half cup of water to dry ingredients and knead until incorporated. Then, add a quarter cup of ghee gradually to smooth out the dough until there are no lumps.
2.) Add wet cheesecloth to cover the dough for at least 15 minutes.
3.) Separate dough into two pieces. Add ghee or olive oil on the surface. Roll out dough until it is a quarter-inch thick. Start dividing out dough lengthwise about an inch apart and a quarter-inch depth.

4.) Divide out the dough and slice them into diamond shapes. See the photo below for reference.

4.) Add 3 cups Canola Oil into a deep fryer. Add pieces of dough in batches on medium-high. Make sure to constantly stir, so it does not clump together. Fry until golden brown.
5.) Place hot biscuits on a paper towel to get rid of any excess oil. Serve with chai or coffee and enjoy!
