AUTUMN LEAVES MADELEINES

Happy Fall! These Autumn Leaves Madeleines will brighten up your fall festive mood in a heartbeat. These red velvet flavored Madeleines are coated in white chocolate, sprinkled with the cutest autumn leaves. These madeleines are perfect with a hot cup of coffee, tea, or even hot cocoa!

INGREDIENTS:

  • 2 Madeleine Pans
  • 2 Egg
  • 2 Egg Yolk
  • 6 Ounce Unsalted Butter
  • 1 Tablespoon Imitation Vanilla Extract
  • 1 1/3 All-Purpose Flour
  • 1/4 Teaspoon Baking Powder
  • 2 Tablespoon Cocoa Powder
  • 1 Cup Granulated Sugar
  • 1 Tablespoon Red Food Coloring
  • 1 Teaspoon Kunafa Powder or Droplets of Orange Food Coloring
  • 1/2 Cup White Chocolate

INSTRUCTIONS:

1.) Melt unsalted butter in 30-second intervals. Mix, so the heat incorporates and melts the butter thoroughly. Set aside to cool to room temperature.
2.) Crack two eggs and two egg yolks in a mixing bowl and mix until incorporated.
3.) Add sugar, salt, and vanilla extract to mixing bowl and mix with eggs until incorporated and the batter becomes pale yellow and reaches a creamy texture.
4.) Slowly add in flour, cocoa powder, and baking powder and mix until fully incorporated.
5.) Mix red food coloring into room temperature melted butter and slowly fold into the mixing bowl. Mix until fully incorporated, and be sure not to overmix so the madeleines do not become dense.
6.) Preheat the oven to 375 Degrees.
7.) Add cooking spray or melted butter and brush on to Madeleine pans.
8.) Spoon 1 tablespoon of batter into Madeleine pans. The batter will puff up from the heat of the oven. I used oil on my fingers to smooth out any dents.
9.) Bake for 20 minutes. Watch the oven closely as the heat of ovens varies.
10.) Remove from oven and allow to cool.
11.) Melt 1/2 cup of white chocolate for 30 seconds in the microwave or until fully melted.
12.) Add one teaspoon of Kunafa Powder and 1 Tablespoon of water in a separate small mixing bowl and mix until incorporated. Slowly add food coloring and mix each time until you receive the desired color of your choice. You will not need to use the entire food coloring so be weary on how much coloring you add in. You can also use Orange Food Dye and add droplets directly into the white chocolate until you reach the selected Autumn leaves color.
13.) Dip one side of the cooled madeleine cookies into the white chocolate until 1/3 of the madeleine cookie is coated.
14.) Decorate with Autumn Leaves Sprinkles and allow to cool.
15.) Serve with tea, coffee or hot cocoa and Enjoy!
