  2. Finely mince garlic and set aside.
  3. Finely chop scallions and set aside.
  4. Grate mozzarella or other melty cheese and set aside.

INSTRUCTIONS:

  1. Clean out mussels and set on a baking tray. Set aside.
  2. Combine the mayonnaise and siracha and minced garlic in a bowl until you reach your desired consistency. Feel free to adjust the Siracha spice levels to your liking.

ASSEMBLE:

  1. Add a generous helping of the sauce onto each mussel. Add the shredded cheeses on top of the mussels. I prefer using mozzarella because it has a stretchy cheesy consistency that is perfect for baking. You can also add cheddar or gouda cheese.
  2. Broil the mussels for two minutes or until they become toasted and golden brown at 400 Degrees. Remember to watch your oven closely because heat temperatures vary for each kitchen.
  3. Remove the mussels from the oven and garnish with chopped scallions. You may add a squeeze of lemon if you prefer some acidity with your mussels. Serve and enjoy!
