CHILI LIME SHRIMP WONTON CUPS

These chili shrimp wonton cups are bite sized and packed of spicy, citrusy, seafood goodness! Serve this delicious appetizer at your summer barbeque, party or for a date night.

INGREDIENTS:

  • shrimp, peeled and deveined
  • wonton shells
  • 1 avocado
  • 1 red onion
  • pint of cherry tomatoes
  • 1 bunch of cilantro
  • 2 whole limes
  • olive oil
  • cajun seasoning to taste
  • black pepper to taste
  • cayenne pepper to taste
  • paprika to taste
  • salt to taste

DIRECTIONS:

1.) To prepare the wonton shells, heat the oven to 350 Degrees.

2.) Lightly brush the wonton wraps with olive oil. Add them evenly to a mini muffin pan, pressing the cups down to the center and ensuring all corners are evenly raised up. Continue the process for the rest of the wonton cups. Once ready, bake the wonton cups for 5-8 minutes or until lightly browned. Remove and allow to cool.

3.) For the shrimp, drizzle the pan with olive oil. Add all of the seasonings to the shrimp and adjust the seasoning to your taste. Once the shrimp is cooked through, squeeze the juice of one lime and garnish with cilantro. Set aside.

4.) For the guacamole, using a mortar and pestle, add one whole avocado to the pot. Smash the avocado to reach a chunky texture. Then add the diced cherry tomatoes, red onions, and chopped cilantro to the pot. Squeeze the lime juice and olive oil to the pot. Season to taste with salt and black pepper and mix thoroughly. Set aside.

5.) To assemble the shrimp wonton cups, fill the bottom of the wonton cup with a spoonful of guacamole. Then top the cup with the chili lime shrimp. Garnish with cilantro and a squeeze of lime juice.

6.) Serve and enjoy!
