Creamy Cheesy Assorted Mushroom Pasta

INGREDEINTS:

  • Assorted Mushrooms (Shitake Mushrooms, Enoki Mushrooms, Portobello Mushrooms)
  • 3 Cloves Minced Garlic
  • 1/3 Small Red Onion
  • Butter
  • Olive Oil
  • Cream Cheese
  • 3/4 Cup Heavy Cream
  • Spinach Pasta (or pasta of your choice)
  • Salt (to taste)
  • Black Pepper (to taste)
  • 1 Tablespoon Garlic Powder
  • 1 Teaspoon Thyme
  • 1 Teaspoon Oregano
  • 2 Tablespoons Dried Basil
  • Crushed Red Chili Flakes (to taste) (optional)

Creamy Cheesy Assorted Mushroom Pasta

DIRECTIONS:

.) Use a large pot to boil pasta. Be sure to salt the pasta war generously. I used uncooked spinach pasta, but you may use what you prefer! Follow pasta package instructions until the pasta is cooked just before al dente. You will finish cooking the pasta in the sauce.
2.) Meanwhile, add one tablespoon of butter and 1/2 tablespoon of olive oil to a skillet. Add 1/3 diced small onion to the pot and cook until onion is softened.
3.) Add assorted mushrooms to the pan. I enjoyed the flavors of shitake, enoki, and portabella mushrooms, but you may use what is available to you. Do not stir the pan until the mushrooms attain a golden brown color. Add in 3 cloves of minced garlic and sauté to soften.
4.) Lower the heat of the pan. Add one tablespoon of heavy cream to the pan to reduce the heat and prevent the sauce from breaking. Slowly add 3/4 cup of heavy cream and stir until the sauce is emulsified.
5.) Add in whipped cream cheese and stir on medium-low flame until incorporated. Add in your seasonings and adjust to your preference!
6.) Add the pasta to the sauce mixture. Use pasta water if the pasta sauce is too thick. Stir until pasta is incorporated nicely with the sauce. At this point, I usually drizzle in olive oil or butter to give the pasta a glossy shine.
