GOURMET SUMMER HOT DOGS

INGREDIENTS:
- Beef Hot Dogs
- Deli Style Buns
- Mayonnaise
- Kosher Pickles
- Crispy Fried Shallots
ROASTED RED PEPPER RELISH:
- 6 Teaspoons of Vinegar
- 1 Roasted Red Pepper
- 1 Jalapeno
- 1/2 Red Onion
- 2 Habanero Peppers
- 4 Garlic Cloves
- 2 Tablespoons Sugar
- 2 Tablespoons Ketchup
- 4 Tablespoons of Orange Marmalade
- 10 Mustard Seeds
- 2 Peppercorns
HOMEMADE CHEESE SAUCE:
- 8 Ounces Shredded Sharp Cheddar Cheese
- 1 Cup of Milk
- 2 Tablespoons Flour
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Tablespoon Paprika Powder
DIRECTIONS:

2.) For the cheese sauce, you can use store-bought cheese sauce or make your homemade version. For the homemade cheese sauce, melt about two tablespoons of butter in a skillet over medium heat. Once the butter has deepened into a golden brown, add in 2 tablespoons of flour. Stir until the taste of flour dissipates and becomes a roux. Slowly stir in one cup of milk to avoid breaking the sauce. Add in 8 ounces of shredded sharp cheddar cheese and mix until combined. Add in one teaspoon Garlic Powder, one teaspoon Onion Powder, and one tablespoon of Paprika Powder. Adjust until you achieve your desired taste. Note: You may also use shredded cheddar cheese as an alternative for your recipe.
3.) Add one tablespoon of mayonnaise to your deli-style bun and grill them until they are toasted. Set aside.
4.) Using a sharp serrated knife, diagonally slice the hot dogs halfway through. The hot dogs should resemble about 3 X’s.
5.) Grill the hot dogs until they are charred to your preference. Once ready, set aside.
6.) To assemble the hot dogs, lather on the cheese sauce to one side of the hot dog bun. Then, add in one kosher dill pickle. Then, place the hot dog snugly into the bun. Add a generous helping of the roasted red pepper relish. Lastly, sprinkle on the crispy fried shallots. Serve immediately and enjoy!
