GRILLED PEACH BRIOCHE TOAST
Prep Time: 5 Minutes | Grill Time: 3 Minutes | Servings: 2 Toasts |
INGREDIENTS:
- 2 Slices of Brioche Toast
- 1 Teaspoon Butter
- 2 Peaches
- 4 Strawberries
- 1 Tablespoon of Brown Sugar
- Squeeze of 1/3 a Lime
- 1 Tablespoon of Goat Cheese Per Toast
- 2 tablespoons of Honey
- Mint For Garnish
- Chia Seeds For Garnish
DIRECTIONS:
1.) Spread about a teaspoon of butter onto the brioche bread and toast until you reach your desired consistency. I recommend toasting until golden brown so the bread can withstand the weight of the peaches.
2.) Dice up some strawberries and set aside. The fresh strawberries will be topped on the toast at the end.
3.) Slice the peaches into rings and add them into a bowl. Drizzle the peaches with brown sugar, honey, and a squeeze of lime and toss until fully incorporated. Remember to toss lightly to avoid tearing the peaches.
4.) Grill the peaches until they reach a nice color on both sides. This should take about 1-2 minutes per side. Once ready, immedietely remove the grilled peaches from the heat.
5.) To assemble the toast, spread a tablespoon of goat cheese across the bread evenly. Add in your grilled peaches and freshly sliced strawberries. Drizzle the toast with honey and garnish with fresh mint and chia seeds. Serve and enjoy!
