CAJUN AIOLI

- 1 Teaspoon Tapatio Hot Sauce
- 1/3 Cup Sour Cream
- 1 Tablespoon Olive Oil
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Cajun Seasoning
- 1 Teaspoon Creole Seasoning
- 1/4 Teaspoon Thyme
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Onion Powder
VEGGIES:
- Sweet Bell Peppers (Yellow, Red, Orange)
- 1 Green Onion Stalk
DIRECTIONS:
1.) First, prep and dice all vegetables, including the sweet bell peppers, jalapeno, red onion, and green onion stalk. Set diced bell peppers aside to add toppings at the end.
2.) For the Spicy Cajun shrimp, peel and devein the Shrimp and add to a large bowl. Add two teaspoons garlic powder, two teaspoon Cajun Powder, two teaspoons Creole Powder, two teaspoon Chili Powder, and two teaspoons Cayenne Pepper. Add the juice of half a lemon and drizzle one tablespoon olive oil and stir until combined. Allow the Shrimp to marinate for 20 minutes. Grill the Shrimp with the Sausage Links in a pan for 5 minutes on both sides or until fully cooked. Set aside.
3.) Drizzle olive oil in a pot. Add diced onions and cook over a medium-low flame. Stir occasionally until the onions transition to a golden brown color. The moisture evaporating from the onions will sweeten the onions and add a caramelized flavor to the fries. Once done, set aside.
4.) For the cheese sauce, melt about two tablespoons of butter in a skillet over medium heat. Stir in one diced onion and the diced jalapeno and cook until the vegetables are softened. Add crushed garlic and mix for 30 seconds. Slowly stir in one cup of milk to avoid breaking the sauce. Add 8 ounces of Cream Cheese and continuously stir the pot until emulsified. Add in 8 ounces of shredded sharp cheddar cheese, and 8 ounces shredded Monterey Jack Cheese and mixed until combined. Add in one teaspoon Garlic Powder, one teaspoon Onion Powder, and one tablespoon of Cajun Seasoning. Adjust until you achieve your desired taste.
5.) For the Cajun Aioli, add 1/3 cup of Mayonnaise, 1/3 cup of Sour Cream, the juice of half a lemon, one teaspoon of Tapatio hot sauce, one teaspoon Smoked Paprika, one teaspoon Cajun Seasoning, one teaspoon Creole Seasoning, 1/4 teaspoon of Thyme, 1/4 teaspoon Garlic Powder and 1/4 teaspoon Onion Powder into a bowl. Mix until combined. Set aside.
6.) Preheat your fry pan or oven and follow package directions for fries and cook until ready.
7.) Assembly time! Add fries to a large tray—layer with Spicy Cajun Shrimp and Sausage Links. Then, add in a nice portion of cheese sauce over the fries. Sprinkle with diced vegetables and caramelized onions. Drizzle in the Cajun Aioli and Tapatio Hot Sauce. Top with green onions.
8.) Serve and Enjoy!
