VEGGIES:

  • Sweet Bell Peppers (Yellow, Red, Orange)

2.) For the Spicy Cajun shrimp, peel and devein the Shrimp and add to a large bowl. Add two teaspoons garlic powder, two teaspoon Cajun Powder, two teaspoons Creole Powder, two teaspoon Chili Powder, and two teaspoons Cayenne Pepper. Add the juice of half a lemon and drizzle one tablespoon olive oil and stir until combined. Allow the Shrimp to marinate for 20 minutes. Grill the Shrimp with the Sausage Links in a pan for 5 minutes on both sides or until fully cooked. Set aside.

3.) Drizzle olive oil in a pot. Add diced onions and cook over a medium-low flame. Stir occasionally until the onions transition to a golden brown color. The moisture evaporating from the onions will sweeten the onions and add a caramelized flavor to the fries. Once done, set aside.
4.) For the cheese sauce, melt about two tablespoons of butter in a skillet over medium heat. Stir in one diced onion and the diced jalapeno and cook until the vegetables are softened. Add crushed garlic and mix for 30 seconds. Slowly stir in one cup of milk to avoid breaking the sauce. Add 8 ounces of Cream Cheese and continuously stir the pot until emulsified. Add in 8 ounces of shredded sharp cheddar cheese, and 8 ounces shredded Monterey Jack Cheese and mixed until combined. Add in one teaspoon Garlic Powder, one teaspoon Onion Powder, and one tablespoon of Cajun Seasoning. Adjust until you achieve your desired taste.
