These pistachio-coated stuffed chocolate dates are so easy to make and so tasty to eat! Stuff the Medjool dates with any nuts of your choice, dip in chocolate, and garnish with various toppings – we chose pistachios! INGREDIENTS:

  • 16 Medjool Dates
  • 16 Almonds
  • Ground Pistachios
  • 1/2 Cup Semi-Sweet Chocolate Chunks
  • 2 Tablespoons of Coconut Oil

DIRECTIONS:

1.) Make the cut lengthways into the dates, remove the stone and add one almond to the middle of the date. Seal the date closed and set it on a tray.

2.) Microwave 1/2 cup semi-sweet chocolate chunks with two tablespoons of coconut oil until melted. Mix until emulsified.

3.) Dip the dates into the chocolate, making sure it is coated thoroughly. Place the chocolate-coated dates on the tray.

4.) Sprinkle the ground pistachios on the date immediately. Repeat for all the dates.
5.) Refrigerate the dates until the chocolate hardens. Serve and enjoy!
