ROASTED VEGGIE PESTO SANDWICH

INGREDIENTS:

  • 2 sourdough slices of bread
  • Sweet peppers
  • Red Onion
  • Broccoli
  • Mushrooms
  • Mozarella Cheese
  • Pesto Sauce
  • Salt
  • Black Pepper
  • Red Chili Flakes

DIRECTIONS:

  1. Drizzle olive oil on two slices of sourdough bread on both sides until golden.
  2. Spread pesto sauce generously on one side of each bread.
  3. Chop up the red onion, sweet peppers, broccoli, and mushrooms, into thin bite sized slices until softened.
  4. Add shredded mozzarella cheese and cover the veggies with a lid to allow the cheese to steam and melt.
  5. Use a spatula to grab the veggies and slide it onto your bread.
  6. Close the sandwich, serve, and enjoy!
