TAMARIND SPICED PLUM CHUTNEY

INGREDIENTS:
- 1 Pound Fresh Plums
- 1 Tablespoon Tamarind Paste
- 2 Teaspoons Paprika Powder
- 1 Teaspoon Salt
- 1 Teaspoon Ginger Powder
- 1/2 Teaspoon Toasted Cumin Powder
- 1/2 Toasted Coriander Powder
- 1/4 Cup Granulated Sugar
- Spice Grinder
DIRECTIONS:
1.) It is not mandatory, but toasting your spices will enhance the flavor of your plum chutney. You can toast the spices in larger quantities and store for the future. Toasted spices will enhance the flavor of this dish immensely.
2.) To toast your spices, grab a non-stick pan and toast Coriander and Cumin separately until the spices start turning into a golden brown color. Use a spice grinder to break down the spices into a powder. Store each spice in its desired container for future use.
3.) In a separate pan, add 1 pound of plums and boil on medium-low flame until it softens and breaks down. Add one tablespoon Tamarind paste to deepen the flavor of the tamarind into the plum sauce.
4.) Once softened, remove the plums from the pot and allow it to cool. Remove the skin of the plums and deseed the plums.
3.) Add the plums into a blender and grind until it reaches a jam-like texture. Add the Plum mixture back into the pot and simmer on medium-low heat.
4.) Add all the spices, sugar, and salt to season. Stir and allow to simmer until it reaches a smooth or chunky texture, depending on your preference.
5.) Once it reaches the desired consistency, allow cooling at room temperature.
